no, please don't try to make fried chicken with seitan. it already has a very dense and chewy texture, if you try breading and frying it you will just have a gross leathery mess. if you're craving deep fried comfort use tofu. vegetarian and vegan cooking is good without pretending to be meat, don't fuck it all up by torturing the ingredients into failing to do something they're not supposed to.

i haven't made it myself just eaten it. i've had hot chicken inspired vegan dishes made w both seitan and w tofu though, much prefer the seitan due to its heavier texture. tofu is too soft and smooth

If you freeze and thaw tofu, it gets a chicken-like texture, very good for making something like chicken nuggets.

basically the drier the tofu, the crispier it gets. this recipe is good
also marinating tofu doesn't work very well because it doesn't properly absorb liquid like meat or seitan does

rare date night with My Wife last night, we saw the new terminator flick. her request as she was massively into T2 as a kid and wanted to see linda hamilton back in action. of course it was naff but we had zero expectations going in so it was fun enough. i think the highlight was when one of the characters said "if you put 100 cops between you and a terminator, you'll just end up with 100 dead cops", and thankfully that turned out to be foreshadowing.

im watching this British comedy called “fleabag” which was marketed as “the female peep show” but is far better realized. i don’t know how good or representative a critique of anything it is. the main character desperately seeks the emotional intimacy she lacks due to losing the few things in her life she did not find ridiculous and contemptible, by compulsively seeking bad sex with people she finds ridiculous and contemptible as this is the most authentic way to become close with strangers. relatable as this may appear i have no sympathy cos most people in this position are also ugly, cry me a river. uh, late capitalism or something
