my favorite thing about dessert is that it happens at the exact wrong end of the meal. the sugar-heavy course is easy to digest and gets your digestive system active and interested in acquiring more food. i always serve the fruit / dessert plate first, followed by protein, then vegetables and starches to eternity... if dessert were at the end, my prediction is that it would make people feel a little sick as their loaded-up digestive system suddenly redlines, and then make them hungrier for the next meal faster. i don't know if that's ever been tested though
