The 'racist' one is saying that I can't relate to people individually by pleading that I'm not racist, you have to admit that racism permeates our social existence and that the only way to open a new relationship with someone on the topic is to say, yes, racism exists, and is jarring and upsetting, but let's put that fact at a small amount of distance so that we can work on it together. If someone just said "I'm the least racist person I know" or whatever they'll sound like a stupid fraud, because it doesn't admit that relationships require work that is disturbing to the status quo, and instead is just some neutral spreading of progressive tolerance to dark corners like liberals suggest.
The 'rape' one uses a similar logic, if I say to people that all rape accusations are true in some universal and perfect way then that does a disservice to the ambiguity and rejection that people feel, it's substituting easy thinking to solve the problem as soon as it presents itself. The reason why rape accusations always have to be taken seriously is not because they are always true, but because the sheer fact that we live in a culture where frequent (truthful) accusations of rape are possible suggests a character to the society where every accusation has a "truth" to it in the sense that it condemns the chauvinism of this society. The rape is "true" because it is a pervasive fact, and the ambiguities in a case that people exploit to "get off the hook" do not make it less true. It's when people hear that cases have zero ambiguities that they often tend to doubt their own situations (I was a bit drunk, I didn't make myself clear, etc.) - which Zizek is saying is garbage (since it is a social/sexist and not just individual crime).
If you just wanted to make him mad you should just make a flyer that says "Zizek is obese and hairy and gross and do you want to stare at that for an hour".
