Okay, so rw was incorrect in calling you some sort of office administrator/secretary.
What would you do on an average day? Did you have locations or events you would go to and speak to people? Cases you would work on? How was your day structured and what were some common tasks you would do a lot.

It depends on what the structure of your organization is, I have the most experience with moderately radical locally based NGOs. In these cases you will often have at most 3-4 paid staff, sometimes less. These kinds of organizations often weasel funding from non-radical sources, usually grants or dedicated funding through a university's student union or grad student association. That sort of thing. Admin work involves some basic stuff like logging hours and handling payroll for staff, tracking recipients of funding, resources or services, keeping good meeting minutes, ordering capital purchases and just maintaining the physical space of an office. Some other things might fall in here depending on what your org does, like administrating a small library. In your typical organization full of wild eyed leftist nonconformists, these are challenging tasks!
Where it can get more creative compared to a typical office job is in the politicking to keep your org alive. Any radical org in these circumstances worth its salt is in danger of being defunded or dissolved if the wrong people catch wind of what their politics actually are or enough noise gets made about it, so as an administrator it's important to make sure your legal foundation is ironclad. No one likes the publicity that comes with defunding a group for political reasons, so they will look for other avenues to attack from. Maintaining perfect books in case of invasive auditing, keeping up with the relevant laws that your group might be incorporated under as a society (which allow you to actually pay your staff and give them benefits), drafting and enforcing bylaws that will be satisfactory to outside scrutiny without interfering with the activities of your group.
Some of this happens for informal/covert groups as well, but you're less likely to find a paid position doing that (which is one reason why they are often a total mess)
If you're worried that your local NGO's aren't radical or orthodox enough, bear in mind that being in these positions often yields a great deal of influence, if you are the bureaucracy then you can gently remake things in your own image far more easily than trying to influence the bureaucracy of a major governmental institution! Also fair warning, sometimes these jobs are selected based on nepotistic volunteer seniority regardless of skill.

unfortunately these sorts of jobs have an under-representation of men so it's a bit presumptuous to assume that we can all have knowledge of them. I wouldn't try to shame a woman who asked me what's involved with fixing an engine belt, it's the 21st century now for pete's sake..
